I know I have posted a banana loaf recipe here before, but this one is different, it is more bready, less cakey, but still sweet enough to classify as a cake if you really wanted it to be. You could throw some cream cheese icing on top if you really wanted to push it into the sweet category.
This was our Sunday breakfast, so no icing here, just buttered while still hot from the oven and served with fresh coffee.
1 3/4 cups SR flour
1/4 cup plain flour
1 tsp ground cinnamon
1/4 teaspoon mixed spice
2/3 cup firmly packed brown sugar
1/2 cup milk
50g melted butter
2 large or 3 small mashed bananas
Sift the flours and spices in a large bowl and then stir through the sugar.
In a smaller bowl lightly whisk the eggs and then add all the other ingredients.
Add the wet mix to the dry mix and stir until just combined.
Pour in a greased and lined loaf tin and bake in a moderate oven for about 45 -50 minutes.
And while the oven was going I decided to throw in some pumpkin cubes. They turned into Sunday lunch with a sprinkle of good salt on bed of baby spinach leaves. Yum Yum.
